Culinary Program
The Culinary Program of the Air Canada Centre

With three restaurants (Air Canada Club, Hot Stove Club, Platinum Club) a full service catering operation (Platinum Catering Co.) and a benchmarked Quick Service program, the Air Canada Centre has no shortage of culinary adventures to embark upon. We source all our ingredients from the best growers and suppliers the world has to offer and we proudly treat these wonderful ingredients to a first class trip through our kitchens. Our butchery department handles thousands of pounds of the best beef primal cuts, skillfully producing Striploin steak, Ribeye, Prime Rib, Filet Mignon and an array of culturally based recipes from the trim for every event. We bring in organically raised chickens from several Ontario farms, game meats such as Arctic Musk Ox and Caribou from our Northern Territories and sustainably harvested fish which we buy mainly from local suppliers. All pastries are made from scratch by our Pastry Chef, Walter Arruda, using organic dairy and grains milled with little or no bleaching. Each restaurant cooks each appetizer and main course upon ordering from our menu to maximize the flavour, colour, texture and nutrition of each dish. We bring in vegetables from as near as possible during our growing season here in Southern Ontario and then we work outward to source the best - all season long. We should also point out that not only are we cooking for the fans but we are responsible for the nutrition of our pro teams when they're in town. This means that we are on the job cooking morning and night, and on top of every aspect of dining - from player breakfast, through daytime executive meetings, dinner before the game and then, last but certainly not least, refueling the players after the big game! All these little details, working from scratch, buying the best, training our staff on-site and utilizing journeyman tradespeople (yep, real cooks) means that the food we serve is made each day fresh and is, we're proud to say, as good as it gets.

There is much talk in the Food & Beverage industry today of labour shortages and a need for more properly trained individuals. We couldn't agree more. Which is why we've been training people, on-site, since we've opened so that we not only have no shortage of labour but more importantly, we have people that we've hired because of their passion, intensity, integrity and focus on customer service that have come to learn and grow with us. Having several Restaurants, Catering and Quick Service outlets in one operation allows us to start anybody that is geared to quality, no matter their experience level, and have them learn, right here, right from 'Step One'. This means that should an individual find themselves longing for the intensity of this fine business but not having had the opportunity, all one needs to do is apply and then demonstrate an ability to learn, grow and understand the importance of taking the best care of our fans. Everyone needs to walk before they run and that's exactly what you will have the chance to show. Whether it's simply rolling cutlery in a napkin or bussing dishes from a table, peeling carrots and onions, or stacking a condiment stand, from the outset you will be told not only 'how' but also 'why' so that as the pieces of the puzzle start to fit together for you, you can more quickly see the big picture.
